The MASAHIRO Carbon Professional Sujihiki 240mm is a long, narrow slicing knife designed for precision cutting of meat and fish, crafted in Seki City, Gifu Prefecture, one of Japan’s most renowned blade-making regions.

Seki has been synonymous with sword and knife craftsmanship for over 700 years, and MASAHIRO stands as one of its leading manufacturers.

Since its founding, MASAHIRO has focused on continuous improvement of raw materials and manufacturing techniques, pursuing exceptional sharpness, durability, corrosion resistance, and user-friendly design.

This Sujihiki belongs to the MASAHIRO Carbon Professional (Rose Handle) Series, made from pure Japanese carbon steel. The blade delivers a crisp, responsive cutting feel and a razor-sharp edge that professionals rely on for clean, single-stroke slicing of roasts, steaks, and fillets.

Hardened to HRC 60, the blade offers an excellent balance of edge retention and ease of resharpening. Its slim profile and lightweight construction reduce resistance during slicing, ensuring smooth, precise cuts without tearing fibers.
