The MASAHIRO Carbon Professional Western-style Deba 210mm is a robust, heavy-duty knife designed for demanding professional tasks, crafted in Seki City, Gifu Prefecture, one of Japan’s most respected blade-making regions.

Unlike traditional Japanese Deba knives, which are typically single-bevel,this Western-style Deba features a double-bevel blade combined with a thick spine and substantial weight. This construction allows it to handle tougher jobs such as breaking down large fish, cutting through bones, and processing poultry—while maintaining the control and balance expected in Western kitchens.

The blade is forged from pure Japanese carbon steel, delivering exceptional sharpness, strong edge stability, and a decisive cutting feel. 

Hardened to HRC 60, it offers excellent edge retention while remaining easy to resharpen—an important quality for professional chefs who maintain their own tools.

With a blade thickness of approximately 5.0 mm and a solid weight of 295 g, this knife provides the power needed for forceful cuts without sacrificing precision. 

The full tang construction, where the steel extends through the entire handle, ensures durability, balance, and long-term reliability.

The handle is made from natural rosewood, offering a comfortable grip, natural warmth, and a refined appearance that complements the knife’s professional character.
